Joker
Ingredients
- 1 ½ oz. JaJa reposado tequila
- ½ oz. Angostura amaro
- ¾ oz. lemon
- ¾ oz. orgeat
- 12 blueberries
- mint leaves
- ice-cold water
- egg whites
- sugar
- citric acid
Instructions
- For the base of the cocktail start by muddling blueberries in a cocktail shaker, then add lemon, orgeat, amaro, tequila, and ice. Shake and strain over crushed ice.
- For mint foam, start by blanching mint leaves and then blend leaves with a touch of ice-cold water. (This process stabilizes mint’s green color.) Add blended mint, egg whites, sugar, and citric acid to whipped cream dispenser. Screw on the cap as well as a new N2O (laughing gas) cartridge. Shake vigorously and top drink with foam.
