Famed Chicago mixologist Paul McGee, along with partners Doug Psaltis and sibling RJ, Jerrod and Molly Melman, recently opened Three Dots and a Dash, a speakeasy-style tiki concept which boasts the largest and most dynamic rum list (175 and counting) in Chicago.

Cocktails showcase modern, classic and large format tiki drinks and are served in custom-made tiki mugs and glasses. The feel of the lounge is that of a hideaway filled with Polynesian artifacts and tropical spirits, and the island fare menu from Chef Psaltis pairs well with the curated 20-cocktail menu.

From the research McGee has done to create these cocktails and find the most exotic rums, to the quality of his ingredients and the passion that has been put into this project, it truly exemplifies a new wave of spirit-focused concepts and the classic tiki bar, a bit modernized and glammed up, of course.

A Lonely Island Lost in the Middle of a Foggy Sea with aged rhum agricole, black strap rum, Indian rum, cold brewed coffee, pineapple and lime.  
Tall as a Tree and Twice as Shady with Scotch whisky, Batavia Arrack, almond, lemon and pineapple.
