The Petrossian Café in Beverly Hills has a 27-year-old chef, Benjamin Bailly, who has worked at every Joël Robuchon restaurant from Monaco to Tokyo. He rocks.

The place looks like a casual café (perhaps a little too much), but the food is off the charts. Try the tartare layered with caviar! And they serve the under-the-radar Champagnes from producer Michele-Elyzabeth.
